Zucchini Noodle Primavera
A fresh and vibrant dish featuring zucchini noodles tossed with colorful vegetables and a light garlic sauce, perfect for showcasing your garden's zucchini.
Begin by washing the zucchini thoroughly under running water. Cut off both ends of the zucchini and spiralize it into noodles using your zucchini pasta maker.
Set the zucchini noodles aside in a colander to drain excess moisture. Heat olive oil in a large skillet over medium heat.
Add minced garlic to the skillet and sauté for about 1 minute until fragrant. Toss in the bell peppers, cherry tomatoes, and broccoli florets into the skillet.
Sauté the vegetables for about 5-7 minutes until they are tender but still crisp. Season the vegetables with salt, pepper, and Italian seasoning to taste.
Add the zucchini noodles to the skillet and gently toss everything together for about 2-3 minutes until the noodles are heated through.
Remove the skillet from heat and stir in fresh basil leaves. Serve the zucchini noodle primavera warm, garnished with grated Parmesan cheese if desired.
