Zesty Mediterranean Instant Pot Chicken with Spinach and Feta

Begin by seasoning the chicken breasts with salt, pepper, and dried oregano on both sides. Set the Instant Pot to 'Sauté' mode and add 2 tablespoons of olive oil.
Once the oil is hot, sear the chicken breasts for 3-4 minutes on each side until golden brown. Remove the chicken and set aside.
In the same pot, add 1 diced onion and 3 minced garlic cloves, sautéing until the onion is translucent, about 2-3 minutes.
Pour in 1 cup of low-sodium chicken broth and scrape the bottom of the pot to deglaze, ensuring no bits are stuck.
Add the seared chicken back into the pot along with 1 teaspoon of dried thyme, the juice of 1 lemon, and 1 teaspoon of lemon zest.
Close the lid and set the Instant Pot to 'Manual' mode for 10 minutes. Once the cooking time is complete, allow for a natural pressure release for 5 minutes, then quick release any remaining pressure.
Open the lid and stir in 4 cups of fresh spinach until wilted. Crumble 1/2 cup of feta cheese over the top and let it sit for a minute to soften.
