In a small bowl, whisk together the olive oil, lemon juice, orange juice, minced garlic, chopped rosemary, thyme, salt, and pepper to create the herb-infused marinade.
Place the chicken breasts in a resealable plastic bag and pour the marinade over them, ensuring they are well coated.
Seal the bag and refrigerate for at least 30 minutes to allow the flavors to meld. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Remove the chicken from the marinade and place it on the prepared baking sheet, discarding the excess marinade.
Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
While the chicken is baking, prepare the citrus glaze by combining honey, lemon juice, and orange juice in a small saucepan over medium heat.
Bring the mixture to a simmer and let it cook for about 5 minutes, or until slightly thickened. Once the chicken is done, remove it from the oven and brush the citrus glaze over the top of each breast.
Return the chicken to the oven for an additional 5 minutes to caramelize the glaze. Remove the chicken from the oven and let it rest for 5 minutes before slicing.
Serve the chicken with a sprinkle of fresh herbs and lemon slices for an elegant presentation.
