Zesty Citrus Herb Grilled Chicken with Avocado Salsa

In a small bowl, whisk together the juice of 1 orange, juice of 1 lime, 2 tablespoons of olive oil, 2 teaspoons of honey, 1 teaspoon of garlic powder, and a pinch of salt and pepper to create a marinade.
Place 4 boneless, skinless chicken breasts in a resealable plastic bag and pour the marinade over the chicken, ensuring each piece is well coated.
Seal the bag and refrigerate for at least 30 minutes, or up to 2 hours for more flavor. Preheat your grill to medium-high heat, about 400°F.
Remove the chicken from the marinade and discard the marinade. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken has nice grill marks.
While the chicken is grilling, prepare the avocado salsa by dicing 2 ripe avocados, 1 small red onion, and 1 medium tomato.
In a bowl, combine the diced ingredients with the juice of 1 lime, 1 tablespoon of chopped fresh cilantro, and a pinch of salt.
Once the chicken is cooked, let it rest for 5 minutes before slicing. Serve the grilled chicken topped with the fresh avocado salsa and a sprinkle of extra cilantro for garnish.
