Turkey Stock Vegetable Soup
This hearty Turkey Stock Vegetable Soup is a perfect way to use leftover turkey stock after Thanksgiving. Packed with vegetables and tender turkey pieces, it’s a comforting dish that warms you up on chilly days.
Start by heating the turkey stock in a large pot over medium heat. Add the diced onions and sauté them until they become translucent, about 5 minutes.
Stir in the minced garlic and cook for an additional minute until fragrant. Add the diced carrots and celery to the pot, and cook for 5 minutes, stirring occasionally.
Pour in the turkey stock and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and add the diced potatoes.
Cook for 10 minutes until the potatoes are tender. Stir in the cooked turkey meat and frozen peas, and let the soup simmer for another 5 minutes.
Season the soup with salt and pepper to taste. Remove the pot from heat and stir in the chopped parsley before serving.
