Truffle-Infused Mushroom and Gruyère Stuffed Puff Pastry Bites

Preheat your oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface until it's about 1/8 inch thick.
Cut the pastry into 3-inch squares using a sharp knife or pizza cutter. In a skillet over medium heat, melt 2 tablespoons of unsalted butter.
Add 1 cup of finely chopped mushrooms and sauté until they are golden brown, about 5-7 minutes. Stir in 1 teaspoon of truffle oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper, then remove from heat.
In a mixing bowl, combine the sautéed mushrooms with 1 cup of shredded Gruyère cheese and 1 tablespoon of fresh thyme leaves.
