Trader Joe's Inspired Mediterranean Quinoa Bowl
This vibrant Mediterranean Quinoa Bowl is a delightful mix of flavors and textures, featuring protein-packed quinoa, fresh vegetables, and a zesty lemon-tahini dressing. Perfect for a quick lunch or dinner, this dish is inspired by the popular offerings at Trader Joe's and is sure to become a favorite.
Start by rinsing 1 cup of quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa with 2 cups of vegetable broth and bring it to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes until the quinoa is fluffy and the liquid is absorbed.
While the quinoa cooks, chop 1 cup of cherry tomatoes in half and dice 1 cucumber into small pieces. In a large mixing bowl, combine the cooked quinoa, chopped tomatoes, diced cucumber, and 1 cup of canned chickpeas, drained and rinsed.
For the dressing, whisk together 3 tablespoons of tahini, the juice of 1 lemon, 1 tablespoon of olive oil, and salt and pepper to taste in a small bowl.
Pour the dressing over the quinoa mixture and toss everything together until well combined. Finally, garnish the bowl with fresh parsley and serve immediately or chill in the refrigerator for later.
