Spicy Mediterranean Chicken Kofta with Mango Mint Salsa

In a large bowl, combine 1 pound of ground chicken, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of smoked paprika, 1/2 teaspoon of cinnamon, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
Mix well until all the spices are evenly distributed. Form the mixture into small oval-shaped patties or kofta.
Preheat a grill or grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.
Grill the kofta for about 5-7 minutes on each side, or until they are cooked through and have nice grill marks.
While the kofta is grilling, prepare the mango mint salsa by dicing 1 ripe mango and finely chopping 1/4 cup of fresh mint leaves.
In a bowl, combine the mango, mint, juice of 1 lime, and a pinch of salt. Mix gently to combine. Once the kofta are done, remove them from the grill and let them rest for a few minutes.
Serve the kofta warm, topped with the mango mint salsa, and enjoy with pita bread or over a bed of couscous for a complete meal.
