In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground chicken and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Stir in 2 cloves of minced garlic and 1 tablespoon of grated ginger, cooking for an additional 2 minutes until fragrant.
Add 1 teaspoon of smoked paprika, 1 teaspoon of ground cumin, and 1/2 teaspoon of red pepper flakes, mixing well to coat the chicken evenly.
Pour in 2 tablespoons of soy sauce and 1 tablespoon of honey, stirring to combine and cook for another 3-4 minutes until the sauce thickens slightly.
Remove the skillet from heat and stir in 1/4 cup of chopped fresh parsley and 1/4 cup of chopped green onions.
For the mango salsa, combine 1 ripe mango (diced), 1/2 red bell pepper (diced), 1/4 cup of chopped cilantro, the juice of 1 lime, and a pinch of salt in a bowl.
Mix well and set aside. To serve, spoon the ground chicken mixture into large lettuce leaves, top with mango salsa, and garnish with additional cilantro if desired.
