Spicy Harissa and Honey Glazed Rotisserie Chicken with Mediterranean Couscous Salad

Preheat your oven to 375°F (190°C) and prepare your rotisserie chicken by patting it dry with paper towels.
In a small bowl, mix together 1/4 cup of harissa paste, 2 tablespoons of honey, 1 tablespoon of olive oil, and the juice of 1 lemon to create the glaze.
Rub the glaze all over the chicken, making sure to get it under the skin for maximum flavor. Place the chicken in a roasting pan and insert a meat thermometer into the thickest part of the thigh.

In a large bowl, combine the cooled couscous with 1 cup of diced cucumber, 1 cup of halved cherry tomatoes, 1/4 cup of chopped red onion, 1/4 cup of chopped fresh parsley, and 1/4 cup of crumbled feta cheese.
Drizzle with 2 tablespoons of olive oil and the juice of 1 lemon, then toss to combine. Once the chicken is done, let it rest for 10 minutes before carving.
Serve the chicken alongside the couscous salad, garnished with additional parsley and lemon wedges for a fresh touch.
