Spam Risotto with Parmesan and Vegetables
This Spam risotto is a creamy and savory dish that combines the unique flavor of Spam with the richness of parmesan cheese and the freshness of carrots, celery, and onion. It's a comforting meal that's easy to prepare and perfect for any occasion.
Begin by dicing the Spam into small cubes. Heat a large skillet over medium heat and add the diced Spam.
Cook the Spam until it is browned and crispy, about 5 minutes. Remove the Spam from the skillet and set it aside.
In the same skillet, add 2 tablespoons of olive oil and heat it over medium heat. Add the diced onion and cook until it becomes translucent, about 3 minutes.
Stir in the diced celery and carrots, and cook for an additional 5 minutes until the vegetables are tender.
Add 1 cup of Arborio rice to the skillet and stir to coat the rice with the oil and vegetables. Pour in 1/2 cup of turkey stock and stir until the liquid is mostly absorbed.
Gradually add the remaining turkey stock, one cup at a time, stirring frequently and allowing the rice to absorb the liquid before adding more.
Continue this process until the rice is creamy and al dente, about 20 minutes. Once the rice is cooked, stir in the cooked Spam and 1 cup of grated parmesan cheese.
Season with salt and pepper to taste. Remove the skillet from heat and let the risotto sit for a few minutes before serving.
Serve the risotto warm, garnished with additional parmesan if desired.
