Start by preheating your oven to 375°F. Next, finely chop 1 cup of fresh pineapple and place it in a mixing bowl.
Add 1/2 cup of diced red onion, 1 jalapeño (seeded and minced), and the juice of 1 lime to the bowl. Stir the mixture well to combine all the flavors.
Season the salsa with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper, then set it aside to let the flavors meld.
In a separate bowl, mix together 1/2 cup of sour cream, 1 tablespoon of lime juice, and 1/4 cup of chopped fresh cilantro to create the cilantro-lime crema.
Set this aside as well. Now, take 1 pound of ground turkey or chicken and season it with 1 teaspoon of garlic powder, 1 teaspoon of smoked paprika, and a pinch of salt and pepper.
Form the mixture into small patties, about 2 inches in diameter. Heat a skillet over medium heat and add 1 tablespoon of olive oil.
Cook the patties for about 5-6 minutes on each side, or until they are cooked through and have a nice golden crust.
While the patties are cooking, slice 8 slider buns in half and place them on a baking sheet. Toast the buns in the oven for about 5 minutes until they are lightly golden.
Once the patties are done, assemble the sliders by placing a patty on the bottom half of each bun, topping it generously with the pineapple salsa, and drizzling the cilantro-lime crema on top.
Finally, place the top half of the bun on each slider and serve immediately, garnished with extra cilantro if desired.
