Start by preheating your oven to 375°F. In a large mixing bowl, combine 1/2 cup of maple syrup, 1/4 cup of Sriracha, 2 tablespoons of soy sauce, and 1 tablespoon of apple cider vinegar to create the glaze.
Place 2 pounds of boneless, skinless chicken thighs in a baking dish and pour the glaze over the chicken, ensuring it is well coated.
Cover the dish with aluminum foil and bake for 30 minutes. While the chicken is baking, peel and chop 2 large sweet potatoes into cubes.
Boil the sweet potatoes in a pot of salted water for about 15 minutes or until tender. Drain the sweet potatoes and return them to the pot.
Add 1/4 cup of milk, 2 tablespoons of butter, and a pinch of salt, then mash until smooth and creamy.
After 30 minutes, remove the foil from the chicken and bake for an additional 15 minutes, allowing the glaze to caramelize.
Once cooked, shred the chicken using two forks and mix it with the remaining glaze in the baking dish.
To serve, spoon a generous portion of sweet potato mash onto each plate and top with the savory shredded chicken.
Garnish with chopped green onions for a fresh touch and enjoy!
