Begin by preheating your oven to 400°F. Remove the rotisserie chicken from its packaging and place it in a baking dish.
In a small bowl, mix together 2 tablespoons of olive oil, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, and 1/2 teaspoon of salt.
Brush this mixture generously over the chicken, ensuring it’s well coated. Bake the chicken in the preheated oven for 15 minutes to crisp up the skin.
While the chicken is baking, prepare the coconut rice by rinsing 1 cup of jasmine rice under cold water until the water runs clear.
