Preheat your oven to 375°F. Remove the rotisserie chicken from its packaging and place it in a roasting pan.
In a small bowl, whisk together 1/4 cup of pure maple syrup, 2 tablespoons of balsamic vinegar, 1 tablespoon of Dijon mustard, and 1 teaspoon of garlic powder to create the glaze.
Brush the glaze generously over the chicken, ensuring it gets into all the nooks and crannies. Sprinkle 1 teaspoon of smoked paprika and 1/2 teaspoon of salt over the chicken for added flavor.
Roast the chicken in the preheated oven for 20 minutes, basting it with the remaining glaze halfway through.
While the chicken is roasting, prepare the mashed cauliflower. Cut 1 head of cauliflower into florets and steam them until tender, about 10 minutes.
In a food processor, combine the steamed cauliflower, 2 tablespoons of unsalted butter, 1/4 cup of heavy cream, 4 cloves of roasted garlic, and salt to taste.
Blend until smooth and creamy. Once the chicken is done roasting, let it rest for 5 minutes before carving.
Serve the chicken alongside the roasted garlic mashed cauliflower, drizzling any remaining glaze over the top for an extra burst of flavor.
