Savory Rotisserie Chicken and Spinach Stuffed Sweet Potatoes with Spicy Yogurt Drizzle
Transform your leftover rotisserie chicken into a delightful and nutritious meal with these stuffed sweet potatoes. The combination of creamy spinach, zesty spices, and a spicy yogurt drizzle makes this dish a standout for busy weeknight dinners.

Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and pierce them several times with a fork.
Place them on a baking sheet and bake for 45-50 minutes, or until tender. While the sweet potatoes are baking, heat a large skillet over medium heat and add 1 tablespoon of olive oil.
Once the oil is hot, add 2 cups of fresh spinach and sauté for 2-3 minutes until wilted. Remove the spinach from the skillet and set aside.
In the same skillet, add the shredded rotisserie chicken, 1 teaspoon of smoked paprika, 1/2 teaspoon of garlic powder, and salt and pepper to taste.
Cook for 5-7 minutes until heated through. Stir in the sautéed spinach and mix well. Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes.
Cut each sweet potato in half lengthwise and scoop out a small portion of the flesh to create a pocket.
Fill each sweet potato half with the chicken and spinach mixture. For the spicy yogurt drizzle, mix together 1/2 cup of plain Greek yogurt, 1 tablespoon of sriracha, and 1 teaspoon of lime juice in a small bowl.
Drizzle the spicy yogurt over the stuffed sweet potatoes before serving. Garnish with fresh cilantro if desired and enjoy your delicious meal!
