Savory Herb-Infused Salmon with Garlic Lemon Butter and Zucchini Noodles

This quick and easy salmon recipe features a savory herb infusion and a luscious garlic lemon butter sauce, served over fresh zucchini noodles for a light and satisfying weeknight dinner.

Begin by preheating your oven to 400°F. In a small bowl, mix together 2 tablespoons of olive oil, 1 teaspoon of dried thyme, 1 teaspoon of dried oregano, and a pinch of salt and pepper to create a herb-infused oil.
Place 2 salmon fillets on a baking sheet lined with parchment paper. Brush the herb-infused oil generously over the salmon fillets.
Squeeze the juice of half a lemon over the salmon for added brightness. Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.
While the salmon is baking, spiralize 2 medium zucchinis to create zucchini noodles. In a large skillet, melt 2 tablespoons of unsalted butter over medium heat.
