Savory Ground Chicken and Seasonal Vegetable Skewers with Citrus Herb Marinade

In a large bowl, combine 1 pound of ground chicken, 1/2 cup of finely chopped red bell pepper, 1/2 cup of diced zucchini, and 1/4 cup of finely chopped red onion.
In a separate bowl, whisk together 2 tablespoons of olive oil, the juice of 1 lemon, the zest of 1 orange, 1 tablespoon of chopped fresh parsley, 1 tablespoon of chopped fresh basil, and 1 teaspoon of garlic powder.
Pour the marinade over the ground chicken mixture and mix until well combined. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Preheat your grill or oven to medium-high heat. While the grill is heating, soak wooden skewers in water for 15 minutes to prevent burning.
Once marinated, form the ground chicken mixture into small patties or balls and thread them onto the skewers, alternating with cherry tomatoes and pieces of bell pepper.
