Savory Ground Beef and Sweet Potato Hash with Maple Chipotle Drizzle

Begin by peeling and dicing 2 medium sweet potatoes into small cubes. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Add the sweet potatoes to the skillet and season with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
Cook for about 10 minutes, stirring occasionally, until they are tender and slightly caramelized. In the same skillet, push the sweet potatoes to one side and add 1 pound of ground beef to the empty side.
Break the beef apart with a spatula and cook until browned, about 5-7 minutes. Stir the sweet potatoes and beef together, then add 1 small diced onion and 2 minced garlic cloves.
Cook for an additional 3-4 minutes until the onion is translucent. Sprinkle in 1 teaspoon of smoked paprika, 1/2 teaspoon of cumin, and 1/4 teaspoon of cayenne pepper for a kick.
Mix well and cook for another minute. While the hash is cooking, prepare the maple chipotle drizzle by whisking together 1/4 cup of pure maple syrup, 1 tablespoon of adobo sauce from a can of chipotle peppers, and 1 tablespoon of apple cider vinegar in a small bowl.
Once the hash is ready, remove it from the heat and drizzle the maple chipotle sauce over the top. Garnish with chopped fresh cilantro and serve hot, enjoying the delightful combination of flavors.
