Savory Ground Beef and Sweet Pea Risotto with Lemon Zest and Parmesan

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 pound of ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Stir in 1 small diced onion and 2 minced garlic cloves, cooking until the onion is translucent, about 3-4 minutes.
Add 1 cup of Arborio rice to the skillet, stirring to coat the rice with the beef mixture for about 2 minutes.
Pour in 4 cups of low-sodium beef broth, one cup at a time, stirring frequently and allowing the rice to absorb the liquid before adding more.
After about 15 minutes, add 1 cup of frozen sweet peas and continue to stir until the rice is creamy and al dente, about 5 more minutes.
Remove the skillet from heat and stir in the zest of 1 lemon, 1/2 cup of grated Parmesan cheese, and salt and pepper to taste.
Serve warm, garnished with additional Parmesan and lemon wedges for a fresh touch.
