Savory Ground Beef and Sweet Corn Fritters with Spicy Avocado Cream
These savory ground beef and sweet corn fritters are a delightful twist on traditional fritters, combining juicy ground beef with sweet corn and spices, served with a zesty avocado cream that elevates the dish to a new level. In a large mixing bowl, combine 1 pound of ground beef, 1 cup of sweet corn kernels, 1/2 cup of all-purpose flour, 1/4 cup of grated Parmesan cheese, 1 teaspoon of smoked paprika, and 1/2 teaspoon of salt.
Mix until well combined. In a separate bowl, whisk together 2 large eggs and 1/4 cup of milk until smooth.
Pour the egg mixture into the beef mixture and stir until fully incorporated. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Once the oil is hot, scoop 1/4 cup of the fritter mixture into the skillet, flattening it slightly with the back of the spoon.
Cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
For the spicy avocado cream, mash 1 ripe avocado in a bowl and mix in 1 tablespoon of lime juice, 1/2 teaspoon of garlic powder, and 1/4 teaspoon of cayenne pepper.
Serve the fritters warm, drizzled with the spicy avocado cream and garnished with fresh cilantro.
