In a large mixing bowl, combine 1 pound of ground beef, 1 cup of sweet corn kernels, 1/2 cup of finely chopped green onions, and 1/4 cup of chopped fresh cilantro.
In a separate bowl, whisk together 1 large egg, 1/2 cup of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
Pour the egg mixture into the beef mixture and stir until well combined. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Once the oil is hot, scoop 1/4 cup of the fritter mixture into the skillet, flattening it slightly with a spatula.
Cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
