Savory Ground Beef and Spinach Stuffed Sweet Potatoes with Garlic Yogurt Sauce

Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and pierce them several times with a fork.
Place them on a baking sheet and bake for 45-50 minutes, or until tender. While the sweet potatoes are baking, heat a large skillet over medium heat.
Add 1 pound of ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Once the beef is browned, add 2 cups of fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
Season the mixture with 1 teaspoon of garlic powder, 1 teaspoon of smoked paprika, and salt and pepper to taste.
Stir well to combine the flavors. In a small bowl, mix together 1 cup of plain Greek yogurt, 2 cloves of minced garlic, and 1 tablespoon of lemon juice to create the garlic yogurt sauce.
Once the sweet potatoes are done baking, remove them from the oven and let them cool for a few minutes.
Cut each sweet potato in half lengthwise and gently scoop out some of the flesh to create a small well.
Fill each sweet potato half with the ground beef and spinach mixture. Drizzle the garlic yogurt sauce over the stuffed sweet potatoes and garnish with fresh parsley if desired.
