In a large bowl, combine 1 pound of ground beef, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and salt and pepper to taste. Mix until well combined.
Chop 1 zucchini, 1 red bell pepper, and 1 yellow squash into bite-sized pieces.
Preheat your grill or grill pan over medium-high heat.
Form the ground beef mixture into small meatballs, about 1 inch in diameter.
Thread the meatballs and chopped vegetables onto skewers, alternating between the two.
