Savory Ground Beef and Seasonal Vegetable Skewers with Chimichurri Sauce

In a large bowl, combine 1 pound of ground beef with 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and salt and pepper to taste.
Mix until well combined. Cut 1 red bell pepper, 1 zucchini, and 1 yellow squash into bite-sized pieces.
Preheat your grill or oven to medium-high heat. Form the ground beef mixture into small meatballs, about 1 inch in diameter.
Thread the meatballs and vegetable pieces onto skewers, alternating between beef and vegetables. Grill the skewers for about 10-12 minutes, turning occasionally, until the beef is cooked through and the vegetables are tender.
While the skewers are cooking, prepare the chimichurri sauce by blending 1 cup of fresh parsley, 1/2 cup of olive oil, 1/4 cup of red wine vinegar, 2 cloves of garlic, 1 teaspoon of red pepper flakes, and salt to taste in a food processor until smooth.
