Savory Ground Beef and Seasonal Vegetable Skewers with Chimichurri Sauce

In a large bowl, combine 1 pound of ground beef, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1/2 teaspoon of salt. Mix until well combined.
Chop 1 red bell pepper, 1 zucchini, and 1 yellow squash into bite-sized pieces.
Preheat your grill or grill pan over medium-high heat.
Form the ground beef mixture into small meatballs, about 1 inch in diameter.
Thread the meatballs onto skewers, alternating with pieces of red bell pepper, zucchini, and yellow squash.
Brush the skewers lightly with olive oil and season with black pepper.
Grill the skewers for about 10-12 minutes, turning occasionally, until the meatballs are cooked through and the vegetables are tender.
