Savory Ground Beef and Roasted Beet Salad with Citrus Vinaigrette

Preheat your oven to 400°F. Wash and peel the beets, then cut them into wedges. Toss the beet wedges with 1 tablespoon of olive oil, salt, and pepper, and spread them on a baking sheet.
Roast the beets in the oven for 30-35 minutes until tender and caramelized. While the beets are roasting, heat a skillet over medium heat and add 1 tablespoon of olive oil.
Once hot, add 1 pound of ground beef to the skillet, breaking it apart with a spatula. Season the beef with 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, and salt to taste.
Cook the beef for about 8-10 minutes until browned and cooked through. In a small bowl, whisk together the juice of 1 orange, 1 tablespoon of honey, 2 tablespoons of apple cider vinegar, and 1/4 cup of olive oil to create the citrus vinaigrette.
Once the beets are done roasting, remove them from the oven and let them cool slightly. In a large bowl, combine mixed salad greens, the roasted beets, and the cooked ground beef.
Drizzle the citrus vinaigrette over the salad and toss gently to combine. Serve the salad warm, garnished with crumbled feta cheese and chopped fresh herbs like parsley or mint for an extra burst of flavor.
