Start by preheating your oven to 400°F (200°C). Next, rinse 1 cup of quinoa under cold water and then cook it according to package instructions, typically using 2 cups of water or broth for added flavor.
While the quinoa cooks, place 4 cloves of garlic, unpeeled, on a baking sheet and roast them in the oven for about 15-20 minutes until soft and fragrant.
In a large skillet over medium heat, add 1 pound of ground beef and cook until browned, breaking it apart with a spatula, which should take about 7-10 minutes.
Once the beef is browned, drain any excess fat and stir in 1 teaspoon of smoked paprika, 1 teaspoon of cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper, cooking for an additional 2 minutes to let the spices bloom.
While the beef is cooking, chop 1 cup of cherry tomatoes, 1 cucumber, and 1/2 red onion, and set them aside in a bowl.
After the garlic is roasted, let it cool slightly, then squeeze the soft garlic cloves into a bowl and mix with 1/4 cup of tahini, 2 tablespoons of lemon juice, and 2 tablespoons of water until smooth.
Once the quinoa is cooked, fluff it with a fork and mix in the chopped vegetables. To serve, layer the quinoa mixture in bowls, top with the seasoned ground beef, and drizzle generously with the roasted garlic tahini sauce.
Garnish with fresh parsley or mint for an extra burst of flavor and color.
