Savory Ground Beef and Cheesy Cauliflower Mash Casserole

Preheat your oven to 375°F. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Stir in 1 diced onion and 2 minced garlic cloves, cooking until the onion is translucent, about 3-4 minutes.
Add 1 teaspoon of dried oregano, 1 teaspoon of smoked paprika, and salt and pepper to taste, mixing well.
In a separate pot, bring 4 cups of water to a boil and add 1 head of cauliflower, chopped into florets.
Cook until tender, about 10 minutes. Drain the cauliflower and return it to the pot. Add 1/2 cup of cream cheese, 1 cup of shredded cheddar cheese, and 1/4 cup of milk to the cauliflower.
Mash until smooth and creamy. In a 9x13 inch baking dish, layer the cooked ground beef mixture evenly on the bottom.
Spread the cheesy cauliflower mash over the beef, smoothing it out with a spatula. In a small bowl, mix 1 cup of panko breadcrumbs with 2 tablespoons of melted butter and 1 tablespoon of chopped fresh parsley.
Sprinkle the breadcrumb mixture evenly over the cauliflower mash. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
