Savory Ground Beef and Cheesy Cauliflower Bake with Hidden Veggies

Preheat your oven to 375°F. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Stir in 1 small onion, finely chopped, and 2 cloves of garlic, minced, and sauté until the onion is translucent, about 3-4 minutes.
Add 1 cup of finely chopped carrots and 1 cup of finely chopped zucchini to the skillet, cooking for another 5 minutes until the vegetables are tender.
