Savory Ground Beef and Cauliflower Rice Stir-Fry with Ginger-Sesame Sauce

Begin by heating 1 tablespoon of sesame oil in a large skillet over medium heat. Add 1 pound of ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Once the beef is browned, drain any excess fat and push the beef to one side of the skillet. In the empty side, add 1 cup of diced bell peppers and 1 cup of shredded carrots.
Sauté the vegetables for about 3-4 minutes until they begin to soften. Next, add 2 cups of cauliflower rice to the skillet, stirring everything together.
Cook for an additional 5 minutes, allowing the cauliflower rice to soften. In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 tablespoon of honey, 1 tablespoon of freshly grated ginger, and 1 teaspoon of sesame seeds.
Pour this sauce over the beef and vegetable mixture, stirring well to combine. Cook for another 2-3 minutes, allowing the flavors to meld.
Remove from heat and garnish with sliced green onions and additional sesame seeds before serving. Serve hot, either on its own or with a side of steamed broccoli for extra nutrition.
