Preheat your oven to 375°F. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground beef and cook until browned, breaking it apart with a spatula.
Stir in 1 diced onion and 2 minced garlic cloves, cooking until the onion is translucent. Add 1 teaspoon of smoked paprika, 1 teaspoon of cumin, and 1/2 teaspoon of salt, mixing well to combine the spices with the beef.
Incorporate 2 cups of cauliflower rice into the skillet, stirring until well mixed and heated through.
In a separate bowl, combine 1 ripe avocado, the juice of 1 lime, and 1/4 cup of Greek yogurt, blending until smooth to create the avocado cream.
In a greased 9x13 inch baking dish, layer the beef and cauliflower mixture evenly. Drizzle half of the avocado cream over the top, then sprinkle with 1 cup of shredded cheese.
