Savory Ground Beef and Caramelized Onion Flatbreads with Feta and Mint

Begin by heating 1 tablespoon of olive oil in a large skillet over medium heat. Add 1 large onion, thinly sliced, and cook for about 10 minutes, stirring occasionally, until the onions are golden brown and caramelized.
Next, push the onions to one side of the skillet and add 1 pound of ground beef to the other side. Cook the beef for about 5-7 minutes, breaking it apart with a spatula until browned and cooked through.
Season the beef with 1 teaspoon of garlic powder, 1 teaspoon of smoked paprika, and salt and pepper to taste.
Stir the caramelized onions into the beef mixture and remove from heat. Preheat your oven to 400°F (200°C).
Place 4 flatbreads on a baking sheet and spread the beef and onion mixture evenly over each flatbread.
Crumble 1 cup of feta cheese over the top of the beef mixture. Bake in the preheated oven for 10-12 minutes, or until the flatbreads are crispy and the cheese is slightly melted.
Once out of the oven, sprinkle fresh mint leaves over the top for a burst of freshness. Slice the flatbreads into wedges and serve warm, drizzled with a little olive oil if desired.
