Savory Ground Beef and Black Bean Stuffed Sweet Potatoes with Avocado Lime Drizzle

Preheat your oven to 400°F. Wash and scrub the sweet potatoes thoroughly, then pierce them several times with a fork.
Place the sweet potatoes on a baking sheet and roast in the preheated oven for 45-50 minutes, or until tender.
While the sweet potatoes are roasting, heat a large skillet over medium heat. Add 1 pound of ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Drain any excess fat from the skillet, then add 1 can (15 ounces) of black beans, rinsed and drained, to the beef.
Stir in 1 teaspoon of cumin, 1 teaspoon of smoked paprika, and salt and pepper to taste. Cook for an additional 5 minutes, allowing the flavors to meld.
In a small bowl, mash 1 ripe avocado and mix in the juice of 1 lime, 1 tablespoon of olive oil, and a pinch of salt to create the avocado lime drizzle.
Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Slice each sweet potato in half lengthwise and gently fluff the insides with a fork.
Spoon the savory ground beef and black bean mixture generously into each sweet potato half. Drizzle the avocado lime sauce over the top and garnish with chopped cilantro if desired.
