Preheat your oven to 425°F (220°C). In a small bowl, combine 2 tablespoons of ground coffee, 1 tablespoon of smoked paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to create the coffee rub.
Pat the whole chicken dry with paper towels to ensure a crispy skin. Rub the coffee mixture all over the chicken, making sure to get it under the skin for maximum flavor.
