Begin by preheating your oven to 400°F. In a mixing bowl, combine 1 cup of all-purpose flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
In another bowl, whisk together 1 cup of milk, 1 large egg, and 2 tablespoons of melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined.
Fold in 1 cup of shredded leftover chicken and 1/2 cup of shredded cheddar cheese. Grease a waffle maker and pour in enough batter to cover the surface.
Cook until golden brown and crispy, about 5 minutes. Carefully remove the waffle and repeat with the remaining batter.
