Savory Canned Chicken and Cheesy Cauliflower Bake with Herb Crust

Preheat your oven to 375°F (190°C). In a large pot, bring salted water to a boil and add 1 head of cauliflower, cut into florets.
Cook for about 10 minutes until tender, then drain and let cool slightly. In a mixing bowl, combine 2 cans of drained canned chicken, 1 cup of shredded cheddar cheese, 1/2 cup of sour cream, 1 teaspoon of garlic powder, and salt and pepper to taste.
Mash the cauliflower with a potato masher until smooth, then fold it into the chicken mixture until well combined.
Transfer the mixture into a greased 9x13 inch baking dish. In a separate bowl, mix 1 cup of breadcrumbs, 1/4 cup of grated Parmesan cheese, 2 tablespoons of olive oil, and 1 tablespoon of dried Italian herbs.
