Preheat your oven to 400°F (200°C). Roll out the pizza dough on a floured surface until it's about 1/4 inch thick.
Cut the dough into 4 equal squares. In a mixing bowl, combine the chopped bell peppers, zucchini, corn, and spinach.
Season the mixture with salt, pepper, and Italian herbs. Place a generous spoonful of the veggie mixture in the center of each dough square.
Sprinkle shredded mozzarella cheese over the veggies. Fold the dough over to create a triangle shape and press the edges to seal.
Place the pizza pockets on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle with garlic powder.
Bake in the preheated oven for 15-20 minutes or until golden brown. While the pizza pockets are baking, prepare the cheesy herb dip by mixing cream cheese, sour cream, shredded cheddar cheese, and chopped fresh herbs in a bowl.
