Pork Chops with Honey-Mustard Glaze and Roasted Brussels Sprouts

Preheat your oven to 400°F. Season the pork chops with salt and pepper on both sides. In a small bowl, mix together the honey, Dijon mustard, and apple cider vinegar to create the glaze.
Heat a large oven-safe skillet over medium-high heat and add olive oil. Once the oil is hot, sear the pork chops for 3-4 minutes on each side until they are golden brown.
Brush half of the honey-mustard glaze over the pork chops. Add the Brussels sprouts to the skillet, tossing them in the remaining glaze.
Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the pork chops reach an internal temperature of 145°F and the Brussels sprouts are tender and caramelized.
Remove from the oven and let the pork chops rest for 5 minutes before serving. Serve the pork chops with the roasted Brussels sprouts on the side, drizzling any remaining glaze over the top for extra flavor.
