Pan-Seared Salmon with Little Gem Lettuce, Lemon Butter Sauce, and Parmesan
This elegant pan-seared salmon dish is enhanced with the addition of Parmesan cheese, served on a bed of tender little gem lettuce and drizzled with a zesty lemon butter sauce, making it a perfect choice for a fancy anniversary dinner.
Begin by preheating your oven to 400°F. Rinse the little gem lettuce under cold water and pat it dry with a paper towel.
Cut the little gem lettuce in half lengthwise and set it aside. Season the salmon fillets with salt and pepper on both sides.
Heat olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, place the salmon fillets skin-side down in the skillet.
Sear the salmon for about 4 minutes until the skin is crispy. Carefully flip the salmon fillets and transfer the skillet to the preheated oven.
Bake the salmon for an additional 6-8 minutes until cooked through. While the salmon is baking, melt butter in a small saucepan over medium heat.
Add minced garlic to the melted butter and sauté for about 1 minute until fragrant. Stir in the lemon juice and zest, and season with salt and pepper to taste.
Remove the salmon from the oven and let it rest for a minute. To serve, place the halved little gem lettuce on plates and top with the salmon fillets.
Drizzle the lemon butter sauce over the salmon and lettuce. Sprinkle grated Parmesan cheese on top and garnish with fresh herbs if desired. Serve immediately.
