Oven-Baked Cheesy Garlic Lemon Fingerling Potatoes and Zucchini
A delicious oven-baked cheesy side dish featuring fingerling potatoes and zucchini, enhanced with garlic and lemon juice, perfect alongside mac and cheese.
Preheat the oven to 400°F (200°C).
Wash and slice the fingerling potatoes into thin rounds.
Wash and dice the zucchini into small cubes.
In a large mixing bowl, combine the sliced potatoes, diced zucchini, olive oil, minced garlic, lemon juice, salt, and black pepper.
Toss the vegetables until they are evenly coated.
Spread the mixture in a single layer on a baking sheet.
Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown, stirring halfway through.
Remove from the oven and sprinkle shredded cheddar cheese over the vegetables.
Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
Let cool slightly before serving.
