Moist Banana Bread with Greek Yogurt
This moist banana bread combines the natural sweetness of ripe bananas with the creaminess of Greek yogurt, resulting in a deliciously tender loaf that's perfect for breakfast or a snack.
Preheat your oven to 350°F (175°C). In a large mixing bowl, mash the ripe bananas until smooth. Add the Greek yogurt, eggs, and vanilla extract to the mashed bananas and mix until well combined.
In another bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
Fold in the sugar and any optional add-ins like nuts or chocolate chips. Pour the batter into a greased loaf pan and smooth the top with a spatula.
Bake in the preheated oven for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
