Lemony Garlicky Salmon with Spinach and Tomatoes in Le Creuset Braiser
This vibrant dish features succulent salmon fillets infused with lemon and garlic, served on a bed of fresh spinach and juicy tomatoes, all cooked to perfection in a Le Creuset braiser.
Begin by preheating your oven to 400°F. Rinse the salmon fillets under cold water and pat them dry with paper towels.
Season both sides of the salmon fillets with salt and pepper. In a large Le Creuset braiser, heat 2 tablespoons of olive oil over medium heat.
Add 4 minced garlic cloves to the hot oil and sauté for about 1 minute until fragrant. Place the seasoned salmon fillets skin-side down in the braiser and sear for 3-4 minutes until the skin is crispy.
Carefully flip the salmon fillets over and add 2 cups of fresh spinach and 1 cup of halved cherry tomatoes around the salmon.
Squeeze the juice of 1 lemon over the salmon and vegetables. Sprinkle 1 teaspoon of dried oregano and 1/2 teaspoon of red pepper flakes over the top.
Cover the braiser with its lid and transfer it to the preheated oven. Bake for 15-20 minutes until the salmon is cooked through and flakes easily with a fork.
Remove the braiser from the oven and let it rest for a few minutes before serving. Garnish with lemon wedges and fresh parsley if desired.
