Lemony Garlic Chicken Breasts with Zucchini and Tomatoes
A flavorful and aromatic dish featuring sautéed chicken breasts, zucchini, and tomatoes cooked with lemon and garlic in a Le Creuset braiser.
Preheat your oven to 375°F (190°C).
Heat olive oil in a Le Creuset braiser over medium-high heat.
Add minced garlic and sauté for 1 minute until fragrant.
Add chicken breasts to the braiser and sear for 3-4 minutes on each side until golden brown.
Add sliced zucchini and diced regular tomatoes to the braiser.
Squeeze the juice of one lemon over the chicken and vegetables.
Add lemon slices on top for extra flavor.
Cover the braiser with its lid and transfer it to the preheated oven.
Bake for 25-30 minutes until the chicken is cooked through and the vegetables are tender.
Remove from the oven and let it rest for 5 minutes before serving.
Garnish with fresh parsley before serving, if desired.
