Lemon Herb Whitefish Dinner for Two

A light and flavorful whitefish dinner, seasoned with fresh herbs and lemon, served with a side of roasted vegetables.
Preheat your oven to 400°F (200°C). Rinse the whitefish fillets under cold water and pat them dry with paper towels.
Place the whitefish fillets on a baking sheet lined with parchment paper. Drizzle olive oil over the fillets and season them with salt, pepper, and lemon juice.
Sprinkle chopped fresh herbs over the fish for added flavor. Cut the bell pepper and zucchini into bite-sized pieces and place them around the fish on the baking sheet.
Drizzle the vegetables with olive oil and season with salt and pepper. Roast the fish and vegetables in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and the vegetables are tender.
Remove the baking sheet from the oven and let it cool for a few minutes before serving. Serve the whitefish and roasted vegetables on plates, garnished with lemon wedges if desired.
