Lemon Herb Grilled Chicken with Quinoa Salad
This refreshing dish features marinated grilled chicken served with a vibrant quinoa salad, perfect for warm weather entertaining.
In a bowl, combine olive oil, lemon juice, minced garlic, chopped fresh herbs, salt, and pepper to create the marinade.
Add the chicken breasts to the marinade and let them soak for at least 30 minutes. While the chicken is marinating, rinse the quinoa under cold water and then cook it according to package instructions.
In a large bowl, combine the cooked quinoa, diced cucumber, halved cherry tomatoes, and chopped red onion.
Drizzle olive oil and lemon juice over the quinoa salad and toss to combine. Preheat the grill to medium-high heat.
