Kousa Mahshi
Kousa Mahshi is a traditional Lebanese dish featuring zucchini stuffed with a flavorful mixture of rice, ground meat, and spices, then simmered in a rich tomato sauce. This dish is a delightful combination of textures and flavors, making it a hidden gem in Lebanese cuisine.
Begin by washing the zucchini thoroughly and cutting off the ends. Use a corer or a small spoon to hollow out the zucchini, being careful not to pierce the skin.
In a large bowl, combine the ground meat, rice, chopped onion, garlic, and spices. Mix the ingredients together until well combined.
Stuff each hollowed zucchini with the meat and rice mixture, leaving a little space at the top for the rice to expand.
In a large pot, heat olive oil over medium heat and sauté the remaining chopped onion until translucent.
Add the tomato paste and water to the pot, stirring to combine. Place the stuffed zucchini in the pot, ensuring they are standing upright.
Cover the pot and let it simmer for about 45 minutes, or until the zucchini is tender and the rice is fully cooked.
Once done, remove the pot from heat and let it sit for a few minutes before serving. Serve the Kousa Mahshi warm, garnished with fresh parsley if desired.
