In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add 1 pound of ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Stir in 2 tablespoons of soy sauce, 1 tablespoon of brown sugar, 1 tablespoon of sesame oil, and 1 teaspoon of minced garlic.
Cook for an additional 3-4 minutes until the beef is well coated and the flavors meld together. In a separate bowl, combine 1 cup of shredded cabbage, 1/2 cup of chopped kimchi, 1 tablespoon of rice vinegar, and 1 teaspoon of sriracha.
Toss until the cabbage is evenly coated. Warm 8 small corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
To assemble the tacos, place a generous spoonful of the beef mixture onto each tortilla. Top with a spoonful of the kimchi slaw and a sprinkle of sesame seeds.
