Korean Cucumber Side Dish (Oi Muchim)
Oi Muchim is a refreshing and spicy Korean cucumber side dish that is perfect for complementing any meal. It features crisp cucumbers tossed in a flavorful mixture of spices, sesame oil, and vinegar, making it a delightful addition to your dining table.
Begin by washing the cucumbers thoroughly under running water. Slice the cucumbers into thin rounds or half-moons, depending on your preference.
Place the sliced cucumbers in a mixing bowl and sprinkle them with salt. Let the cucumbers sit for about 10 minutes to draw out excess moisture.
After 10 minutes, rinse the cucumbers under cold water to remove the salt and drain them well. In a separate bowl, combine the minced garlic, red pepper flakes, sugar, sesame oil, and vinegar to create the dressing.
Add the drained cucumbers to the dressing and toss everything together until the cucumbers are well coated.
Finally, garnish with sesame seeds and chopped green onions before serving.
