Hearty Spam and Bean Stew

This hearty stew combines the savory flavor of spam with nutritious black and kidney beans, all simmered in chicken broth with a medley of vegetables. It's a comforting dish that's easy to prepare and perfect for a cozy meal.
Start by dicing the spam into small cubes. Heat a large pot over medium heat and add the diced spam. Cook the spam until it is browned and crispy, which should take about 5 minutes.
Next, drain and rinse the black beans and kidney beans under cold water. Add the rinsed beans to the pot with the spam.
Pour in the chicken broth and stir to combine all the ingredients. Chop your choice of vegetables into bite-sized pieces and add them to the pot.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes. Stir occasionally to ensure nothing sticks to the bottom of the pot.
After 20 minutes, taste the stew and adjust the seasoning if necessary. Serve the stew hot, garnished with fresh herbs if desired.
